About Pho

Pho is Vietnam's defining dish: rice noodles in a clear, hours-simmered broth of charred onion, ginger and warm spices, finished with beef or chicken and a plate of fresh herbs.

Born in early-20th-century northern Vietnam, it split into austere Hanoi (northern) and exuberant Saigon (southern) styles, and went global after 1975 through the refugee diaspora.
